Low Fat Spinach Omelette
Ingredients (Serves 1):
- 1 cup chopped spinach 
- 6 chopped cherry tomatoes 
- 3 egg whites 
- 1 full egg 
- Salt & Pepper 
- 1/2 tsp Garlic Powder 
- Spray Oil 
Instructions:
- Crack all the eggs and place in a bowl on the side (3 white and 1 full). 
- In the meantime, spray the pan with spray oil and add the chopped spinach and cherry tomatoes on medium heat. 
- Add 1/2 tsp Garlic powder and a dash of salt and pepper to the eggs. 
- Stir the eggs and add to the pan with spinach and cherry tomatoes. 
- Let the eggs cook for two minutes, and then flip to the other side, cook for two minutes. 
- Serve the eggs with some pitas bread or toast!
